Fruit Tart. With the past two colourful posts I was in the need of another, so here's my favourite of the fruit bakes of last year just to brighten things up a bit. It's been so grey here for so long, I swear I'm moving to paradise soon.... Where ever that is 😎 and while I'm at it I'll hire a time machine, zip back 6 years undo my Mum's dementia, get back to the present and jet us all off to some sunny place where we can pick fruit from the tress and feel the sand under our toes. Now wouldn't that be good! Sending you all warm wishes of a colourful day ahead 💖😘

Rhubarb and apple frangipane tart. Remember that really vibrant tart I posted last week, well this is how it turned out. I've umm'd and arr'd as to whether to post this pic or not...it's not my usual style. The shot was very rushed as it was getting dark, then off it headed to the table....but, the more I've looked at it, the more I absolutely loved it. I thought that the tart was beautiful in its antique and vintagesque appearance and the photo does capture that, so for that reason...here it is 💖 I served this with some poached rhubarb and some homemade crème anglaise, and it was delicious. Rhubarb and custard is always a winner #whyistherenospoonemoji 😋
Gooseberry and white peach galette. I've been making use of those gorgeous ruby gooseberries today. They're much sweeter than the typical green ones but still tart enough to need a bit of sweetening. As well as sugar I added some white peach which added that sweetness perfectly. It was delicious.....my neighbour told me so, after his 3rd piece!
Lemon tart with strawberries, meringues and baby basil. I woke up this morning to another day of rain, however, after checking my instagram and seeing a lovely message, sunshine suddenly felt like it was shining brightly. I was told by the sender that I my page makes them happy, that I make them smile and that I give them inspiration, and not only that, they told me that they have nominated my page for the Observer Food Monthly Awards. So in turn, that message inspired me today. To make a dessert that will surely bring sunshine inside. Thank you so much @forkandwalk ☀💖
I'm planning on making some berry tarts tomorrow. When looking back through my album I discovered this unposted pic of the strawberry tart I made a few weeks ago. It was a very in your face design but it was so delicious. I'm thinking a more romantic looking tart tomorrow but I'll just go with the slow and see what happens.......
Good Morning Friday!!! The sun is still shining, 3 days in a row!! That's quite something where I live! It's given me a push to get lots done today. There's already bread rising, pasta dough resting, sauces being cooked, purees been whizzed, simmering pots and these have just come out of the oven. Mini friands or financiers, which ever you prefer to call them. Some are flavoured with rhubarb, some with blueberries and some just with almonds. Sweet, moist little cakes to serve with tea or coffee, a perfect petit four. Have a lovely weekend. Fingers crossed the sun stays out 🌞 Thank you to @eatlittlebird for the recipe. I found it online on her blog. I just altered the cooking time due to these being mini friands and some changed the flavourings slightly, they worked beautifully 😘
