After recovering from quite the eventful night where me and @samantha.bosch won free cocktails, ate vegan pizza @mastino_v_ (hotspot post on its way), crashed at someone's place, slept underneath towels and finding out I got a nice cigarette burn on my finger (happens to the best of us and no, I absolutely don't smoke!!) I'm almost as good as new! So it's time to nourish this body with some healthy plant based goodies such as this colourful rainbowl. I'll soon add a recipe for these umami enoki mushrooms which might be my new favorite mushrooms, they are sooooo chewy🤷🏾♂️ • On another note, I'll be making bentos tomorrow @shisodelicious's bento workshop in Amsterdam. The fantasea bowl. Filled with pan fried rainbow kelp noodles, stir fried greens and fresh greens such as watercress to nourish the body, mind and soul. I'll post a recipe for a similar fantasea bowl asap. Healthy eating has never been so exciting, am I right!? Look for the unicorn noodles. : Tonight I'll have to substitute another class at my yoga teachers studio, the nerves are back but I'm sure it'll be a magical class. I can't wait to integrate everything I've been taught during my study so far. This past weekend has been really transformative, hence my absence. Hi friends, I've got something a bit different today. I just posted my first vegan #hotspot post on my blog. And even for a hot spot it's quite unusual because it's a candy store, who would have thought. It's quite ironic because I'm not much of a sweet tooth, I much prefer savoury over sweet in almost every occasion, but there are some exactions on this rule. This spekkoek is one of those cases where I'll pick sweet over savory, I've been looking for a vegan spekkoek for almost three years now and finally got one! 🚂 Choo Choo! Hop aboard the hype train!! This is not just a rainbow rice bowl, noooo, it's extra special, it features my new recipe, aka unicorn rice. It's basically blue/lilac rice that changes to pink with the flick or a wrist. And no expensive or allusive ingredients needed, all you need it a veggie you've probably have stored in the fridge as we speak, or not I don't know your fridge! But hey I'm open to any kind of natural food colorings, this one just happens to be dirt cheap, well at least in the Netherlands! You can find the a link in my profile for simple instructions. It's part science and part magic! I paired it with my miso beet sauce, a delicious hot pink raw vegan sauce which you can also find a recipe for on my blog. An extra festive hummus platter with some roasted carrots and toasted bread with a soup sweet potato/curry soup on the side✔️ Both of these dishes would make an excellent addition to your holiday dinner menu. The recipe for the black hummus is available on my blog (link in profile). To this batch I added more lemon, a chilli and a pinch of garam masala, it's a win! I'll upload the recipe for the sweet potato soup this Thursday! Happy Sunday friends! Today couldn't have started of better. Two hours of yoga, soup, amazing people and this awesome dessert! You can find the recipe for this festive chia parfait on my blog (link in profile). This dish is inspired by @talinegabriel and @earthyandy's #talineandandyschristmascomp festive Christmas comp. It's a raspberry/beet & mango/spirulina chia pudding, with a pineapple/banana coco smoothie and topped with a rich and creamy coconut whipped cream. I also topped it with some banana stars, cacao powder and a spicy chai bark. 🎄 Even though I've not been feeling the Holiday vibes the past few weeks, making this dish did make it itch a little. Especially since my fam went wild and my mom decided to officially add it to our family's holiday dinner menu. You know what, I might even watch the grinch! Blueberry Açai chia pudding w/ coconut yoghurt, kiwi and mango rose or blueberries on top. Chia pudding is one of my favorite lazy breakfast items! Leftover curry with a shiny espeon rice ball!? Yup I'm 12 and I don't care 👶🏽. No but to be honest we all should embrace our inner child's. Sometimes we forget to play and have fun, while it may just be what we need. Another shot of these black cupcakes w/ a silver frosting, straight from a spooky fairytale. I've been making them quite often the past month, my family loves them and non of them are vegan and some don't even like cupcakes, win! These make a great last minute Halloween snack! I often make them without the frosting as the cupcake by itself is great enough, it does add to the presentation though! Also stay aware of the black tahini and let these cool before munching or else the black tahini will dominate the chocolate flavor which isn't what we want! I should definitely have more smoothies, especially as great as these! For some reason I tend to eat a lot more raw foods during the colder months, even though I love more warming foods! Well anyways this was a very easy smoothie containing bananas, pineapples and spirulina topped with fruits, nuts, seeds and beet powder.✨ You can also expect some more personal posts coming up as I want to share more of the things that help me get the most out of life. I'm a hot mess sometimes, sometimes even often, but there is so much I've learned the past couple of year through therapy and my lifestyle change, and I just have to share. Back with some colour and another quick and easy recipe. Today's lunch and dinner is rice with a bell pepper stew, I made it quite thick but make it however you like it, add other veggies and experiment with herbs and spices. These recipes are to show that veganism is very attainable and doesn't require you to spend hours in the kitchen or eat "boring" foods, and I also encourage to experiment and find out what kind of flavors and foods you love. For example try adding some coconut cream and cilantro to the stew leaving out the herbs and you've got a total different dish, maybe more to your taste ✨ I know some people don't have much time to cook and still want something healthy and tasty, these are for you. I'll post a "Quick&Easy" recipe every single week, so look out for next weeks recipes! Also always feel free to leave suggestions. Now have a blessed weekend everyone! Anyone has some fun plans? As a lover of sushi I'll never stop creating new recipes, actually I don't even know if I can still call these rolls sushi😅. I used sticky black coconut rice which I spiced and filled with some fresh veggies. If you are a lover of spicy foods you should really give these a try! Because of the seasoning of the rice you don't really need anything to dip it in, having said that if you love heat dip it in some hot sauce like I did 🌶 You can find the recipe on my blog, link in profile. A pizza made from rice? Find out how on my blog (link in profile). For a gluten free pizza it's absolutely winning! Just don't expect a dough like crust, but it'll definitely hold its own when it comes to flavor and texture. It's crisp on the edges and firm under eat all the toppings. I made it very spicy so cut down on fire if you can't handle the heat.🔥 Do you know those days when nothing seems to go right and you have to push yourself to get things done? I'm currently having one of those, but I guess I'll just accept how things are going and try to relax (And if the servers are fixed maybe hunt for some Pokemon)! Who said raw foods were boring? During the warmer months I automatically add more raw foods to my diet, it's just what my body is craving. Had this banana/pineapple and spirulina smoothie bowl for breakfast topped with fruits, coconut yoghurt, pecans and beet powder. ✨ Today is perfect! Unicorn dumplings and friends! Today I'm hosting a vegan dinner with friends, we all bring a vegan dish and enjoy each other Noms. When I first came to this lifestyle I had no one to share it with so these get togethers are always fun and delicious! Having a group of like minded people, who inspire each other and help each other grow is very important to me! 💖 Of course I had to make something colourful, because I'm basically a unicorn 🦄. The green and red dumplings are filled with a tofu, scallion and oyster mushroom filling, while the turquoise dumpling is filled with a chickpea, spinach and peas filling.
